- Cut the red onion in half and cut them into strips
- Half the cherry tomatoes
- Remove the coriander from it’s stalks
- Cut the halloumi into slices. Place slices on a griddle pan for 3 mins on each side or until charred.
- Warm up the pittas and then cut into half to form a pitta pocket. Fill the pitta with red onion, cherry tomatoes, halloumi, coriander leaves and pomegranate seeds.
