Halloumi Pitta Pockets



  1. Cut the red onion in half and cut them into strips
  2. Half the cherry tomatoes
  3. Remove the coriander from it’s stalks
  4. Cut the halloumi into slices. Place slices on a griddle pan for 3 mins on each side or until charred.
  5. Warm up the pittas and then cut into half to form a pitta pocket. Fill the pitta with red onion, cherry tomatoes, halloumi, coriander leaves and pomegranate seeds.
