Now that summer is just around the corner and lots more fruit is coming into season, it’s time to get your smoothie maker out. This delicious smoothie is creamy and refreshing, and has a good kick from the ginger. It’s is high in vitamin C (mango) and antioxidants (spinach), as well as being a good source of healthy fats like omega-3s (chia seeds). We’ve included lots of fruit, as well as veg like spinach and broccoli, and some nuts and seeds. We’ve recommended freezing the fruit for a instant chilled smoothie and served it as a smoothie bowl which you can top with whatever you like.

Methods

 

1. Add all of the ingredients to a high speed blender and blend on high for approximately 45 seconds until creamy and smooth.

 

2. Taste the smoothie and add more spinach if you want to make it greener, more banana or mango to make it sweeter, more almond milk to make it creamier, or more ice to make it cooler. If you have used frozen bananas or mango then you may not need to add as much or any ice. If you are making a smoothie bowl as apposed to a regular smoothie then you can have it as thick as you like.

 

3. Pour the smoothie into a small bowl and arrange the fruit, nuts and chia seeds on top. Enjoy straight away with a spoon or it will keep in the fridge for a few days. If you’re making this smoothie for 2 people then just double the ingredients. Enjoy.

Ingredients

 

2 man-sized handfuls of spinach
Half a mango, skin and stone removed, or 1 apple, corked and seeds removed
1 stalk of broccoli (save the florets for a stir-fry)
1 frozen banana (freeze in slices or chunks and place in a freezer bag once frozen to avoid clumping together)
Thumb size piece ginger, skin removed
1 small handful or 15g cashews
Juice of 1 lime
1 tsp chia seeds
50-75ml water (depend on how thick you want it) or almond milk if you want it creamier
Few ice cubes
