It’s #Britishsandwichweek and we have this delicious Halloumi & Griddled Veg Pitta Pockets recipe for you.
1. Cut your courgettes into strips. De-seed the peppers, and cut them into strips.
2. Add a drizzle of olive oil to a griddle pan, once hot add the chopped veggies and grill until nicely charred, then remove from the pan.
3. Wipe the pan clean, cut the halloumi into slices. Place slices on griddle pan for 3 mins on each side.
4. Warm up the pittas and then cut in half to form a little pocket. Fill the pitta pockets with the grilled veggies, a slice or two of halloumi and a small handful of rocket. Drizzle over a small amount of pesto and enjoy!
