Greek-style chicken pitta


Its #nationalpicnicweek so switch up your average chicken sandwich with this delicious Greek-style chicken pitta with a crunchy salad and tzatziki dressing.



1. Make tzatziki. Combine all the ingredients in a bowl, then season to taste and set aside.


2. In a small bowl, toss together the cabbage, red pepper, spring onion, mint leaves and lemon juice, until combined.


3. Lighlty toast the pitta, then split. Fill with the mixed salad and chicken, then drizzle over the tzatziki.

30g red cabbage, finely shredded
1/2 chargrilled red pepper, roasted or jarred
1 spring onion, trimmed and finely sliced
Handful small fresh mint leaves
1tbsp freshly squeezed lemon juice
1 Food Doctor Pitta
70g cooked skinless chicken breast fillet, chopped


For the tzatziki:
20g 0% fat nautral Greek yogurt
20g cucumber, grated
1tbsp freshly squeezed lemon juice
1tsp chopped fresh mint
