Blueberry Porridge Squares

Porridge is one of the best breakfasts for keeping you full till lunch. Oats contain a form of fibre called beta-glucan which is good for digestion and helps to lower ‘bad’ cholesterol levels. If you’re rushing out the door in the morning, grab one of these porridge squares and eat it on the go.

Methods

 

1. Preheat the oven to 180C and grease an 8×8 baking tin.

 

2. In a large mixing bowl, add the oats, then stir through the rest of the ingredients.

 

3. Pour the oat mix into the baking tin and cook in the oven for 25 minutes, then leave to cool for 20 minutes before cutting into 12 squares.

Ingredients

 

300g chunky oats
200ml nut or soya milk
4 tbsp maple syrup or honey
2 tbsp smooth almond butter
2 tbsp flaked almonds
2 tbsp sunflower, pumpkin or linseeds
200g blueberries
1 tsp vanilla essence
Pinch of sea salt
