NUTRITIONAL NUGGET – V is for Vegetables

 

Vegetables have so many benefits that they should be the star of your plate rather than the supporting act. There are so many different textures and colours to choose from and they all supply fibre, minerals such as potassium and vitamins such as vitamin C. An 80g portion counts as one of your 5-a-day fruit and veg portions.

 

Check out these 3 ways to enjoy vegetables:

 

1. ? Make pasta richer in protein: Add a can of sweetcorn or frozen peas to your pasta after cooking to bring colour, texture and more protein.

 

2.? Add bulk to stir-fries: Whatever your stir-fry, get into the habit of throwing in some veg to add colour and bulk. Shredded carrots, beansprouts and sliced spring onions work particularly well in Chinese dishes.

 

3. ?? Colour your plate: The more variety of colours, the wider the range of nutrients so go wild with an array of your favourite vegetables. Get into the habit of having two vegetables on your plate at every meal. Green beans and sweetcorn make good partners.
