NUTRITIONAL NUGGET – L is for lemon ?
Lemon may not be a food you eat on its own, but add it to dishes and it will enhance the flavours, lower the glycaemic index (GI), and add a tang that helps you need less salt. Foods with a lower GI are more slowly digested than foods with a high GI. This helps to slow down the rise in your blood sugar, particularly important for people with diabetes.
Rich in vitamin C, lemons help you to absorb the iron from vegetarian foods like spinach, green lentils and kale.
1. Zest it. Add the zest of lemon to your baking – it will bring fresh citrus notes to your cakes and cookies.
2. Slice it. If you don’t like the taste of plain water, add lemon slices and crushed ice to still or sparkling water.
3. Drizzle it. Home-made popcorn is a great source of whole grains, but it’s often tempting to add salt. Instead, try a scattering of red chilli powder and a drizzle of fresh lemon juice before serving.
