NUTRITIONAL NUGGET – A is for Avocado…

 

Avocados are cholesterol-free, rich in potassium, and although high in fat, most of the fat is the healthier unsaturated type. They’re also a source vitamin C, vitamin B6 and fibre. Half an avocado will count as one portion of your “at least 5-a-day” fruit and veg recommendation. Check out these 3 ways to enjoy avocado:

 

1. Blitz them into a smoothie with tomato juice, lime and mint

 

2. Mash avocado with a drizzle of balsamic vinegar and use as a sandwich spread in place of butter

 

3. Make a chunky salsa with cubes of avocado, chopped red peppers, red onion and coriander leaves, dressed in lemon juice and coarse black pepper
